Sesame Crusted Ahi Tuna

One of my favourites. Make sure you are purchasing fresh, sashimi-grade tuna, and have them cut it so that it is in thick blocks. It makes for a refreshingly "tall" presentation.


1/4 cup black sesame seeds
1/4 cup white sesame seeds
2 tbsp vegetable oil, divided
4 6-ounce ahi tuna steaks
salt / pepper to taste

  1. Mix together seeds.
  2. Trim and debone tuna with needle-nose pliers if necessary; pat dry.
  3. Season tuna with salt and pepper. Brush with veg oil.
  4. Dredge in seeds.
  5. Panfry at medium-high heat in remaining vegetable oil for ~15-30 seconds on each side. (Do not burn seeds.)
  6. Serve with red-wine reduction, sweet Japanese mayonnaise, or wasabi dressing.
