Shortbread Cutouts

Slightly sweet, always buttery. My oldest cousins' recipe.


1 lb butter
1 cup icing sugar
3 tbsp brown sugar
4 cups flour

  1. Soften butter completely by cutting into pieces and leaving at room temperature for 1 hour.
  2. Add sugars to softened butter and creaming until fluffy.
  3. Mix in flour by hand or by mixer, and turn out onto unfloured surface and knead for 5 minutes.
  4. Divide into two portions. Flatten into discs, wrap, and chill until firm, about half an hour.
  5. Roll to 1/4" thickness on unfloured surface. Cut with cookie cutters and place on ungreased baking sheets. Reroll scraps.
  6. Bake at 325ºF for 10-15 minutes or until golden brown.
  7. Cool 5 minutes on sheets. Remove to wire racks to complete cooling.
