Shortbread Cutouts
Slightly sweet, always buttery. My oldest cousins' recipe.
1 lb butter
1 cup icing sugar
3 tbsp brown sugar
4 cups flour
- Soften butter completely by cutting into pieces and leaving at room temperature for 1 hour.
- Add sugars to softened butter and creaming until fluffy.
- Mix in flour by hand or by mixer, and turn out onto unfloured surface and knead for 5 minutes.
- Divide into two portions. Flatten into discs, wrap, and chill until firm, about half an hour.
- Roll to 1/4" thickness on unfloured surface. Cut with cookie cutters and place on ungreased
baking sheets. Reroll scraps.
- Bake at 325ºF for 10-15 minutes or until golden brown.
- Cool 5 minutes on sheets. Remove to wire racks to complete cooling.
