Ginger Cookies

An icebox recipe.


1 cup butter
1 cup white sugar
1 egg
2 tablespoons corn syrup
2 tsp baking soda
1 whole orange peel, grated
3 cups flour (all-purpose)
2 teaspoons minced or finely grated fresh ginger
2 teaspoons cinnamon
1/2 teaspoons cloves

  1. Cream together butter and sugar.
  2. Beat in egg. Beat in corn syrup.
  3. Stir in remaining ingredients. Mix well.
  4. Divide into three portions, roll into logs, wrap with plastic wrap, and chill or freeze until firm.
  5. When ready to bake, slice thinly and place on ungreased baking sheet. Bake at 400ºF for 8 to 10 minutes (slightly golden).
