Ginger Cookies
An icebox recipe.
1 cup butter
1 cup white sugar
1 egg
2 tablespoons corn syrup
2 tsp baking soda
1 whole orange peel, grated
3 cups flour (all-purpose)
2 teaspoons minced or finely grated fresh ginger
2 teaspoons cinnamon
1/2 teaspoons cloves
- Cream together butter and sugar.
- Beat in egg. Beat in corn syrup.
- Stir in remaining ingredients. Mix well.
- Divide into three portions, roll into logs, wrap with plastic wrap, and chill or freeze until firm.
- When ready to bake, slice thinly and place on ungreased baking sheet. Bake at 400ºF for 8 to 10 minutes (slightly golden).
